My Task : Grab ingredients, stir fry ingredients. Clean up – Dish drier (dry all dishes, put away dishes)
30 mL vegetable oil
1/2 diced onion
15 mL minced garlic
5 mL cumin
250 mL red lentils
15 mL garam masala
Salt and pepper to taste
10 mL sugar
1 bay leaf
125 mL diced tomatoes
5 mL rice vinegar
1000 mL chicken stock
1. In a large pot, heat the oil and stir fry just until wilted, do not brown.
2. Add the garlic, cumin, lentils, ginger, garam masala, salt, pepper, sugar and bay leaf. Sautee for 1 to 2 minutes, until the herbs and the spices bloom (aromatic)
3. Add the tomatoes and deglaze with the vinegar.
4. Add the chicken stock, bring to a boil and then lower to a simmer and cook until lentils and tender, stirring occasionally. Taste and adjust seasonings with cumin, salt, pepper, and sugar.
