May 1, 2014 ~ May 30, 2014: Kyekyire Paano (Toasted Cornmeal Cookies from Ivory coast), Sand cookies, Chilaquiles, Rhubarb crisp, Apple Pie, Creole Cheese Potato Puffs
My Task : Grab ingredients, mash potatoes, whip egg whites, spoon in potato mixture. Clean Up- Special Duties (clean up demo unit area, wash and rinse all demo unit dishes.)
Creole Cheese Potato Puffs
45 mL Milk
30 mL Butter
625 mL Cold Mashed Potatoes (about 4 potatoes)
125 mL Grated Cheddar Cheese
½ Onion, finely chopped
Salt & Pepper to taste
Dash of Nutmeg
2 Eggs, separated
1.Preheat oven to 425 F and generously grease 12 hole muffin tin.
2. Warm the milk and butter just below boiling point. Add milk and butter mixture to the potatoes, cheese, onion, and seasonings in a bowl. Mix in egg yolks and mix thoroughly.
3. Beat the egg whites until soft peaks form. Fold in egg whites to the potato mixture.
4. Spoon the mixture into the muffin tin, about ¾ full.
5. Bake for 15 minutes, or until golden brown.
My Opinion of the Lab:
This lab is pretty cool because it is like mashed potatoes but in little muffin tins. They are easier to eat this way and you know your portions. They are fluffy, rich and delicious. They are excellent if you have any leftover boiled potatoes or mashed potatoes.

I could useless butter, and use low fat cheese

This recipe is pretty cheap, but I could use margarine instead of butter.
